The most important thing that the students can work on during this time is reading. I recommend that you support your student in reading books that are at their independent reading level (books that they can read with little to no help from someone else). Talk with them about the story, ask questions that let them retell the story to you. Rereading books is encouraged! So many skills are built when we read and reread books!
